Mixed Bisque



This mixed Bisque is just what the name seas it is because its ingredience have shrimp, crayfish, crab, clams and fish.

This dish is quite expensive and it takes a lot of time to prepare. But boy - is this worth it - it's the foods of paradise!

I must confess - this is a mixed dish sharing with only your best friend and that better be your lover - for this delicatessen is one of the BEST I've ever cooked.

This dish also, should not be rushed or over cooked.

It really should be nursed to perfection by somebody that's experienced in cooking seafood because the different "meats" in this dish will not be done at the same time.

Mixed Seafood Bisque

Your ingredience for this dish is quite a list:

1 Cup clams, with juice

1 Cup Italian tomatoes, crushed

1 Cup white wine

1 quart milk

1 stick butter

1 Tbsp. garlic, chopped

1 teaspoon lemon juice

1 tsp. paprika

1/2 bunch green onion, chopped

1/2 Cup flour

1/2 onion, diced

1/2 stalk celery, diced

1/4 Cup sherry

10 oz. fish, diced

2 C. heavy cream

2 oz. crawfish tails

2 oz. lump crabmeat

2 oz. scallops

2 tablespoons basil, chopped


Method:

Stir in the flour until all is incorporated and forming an even broth.

Slowly add the sherry, white wine, the cream and milk and stirring it continuously.

Bring all this to a slow boil.

Add all of the seafood ingredients, with the lemon juice, the green onions and the paprika.

Bring all this back to a very slow boil – making sure all the seafood meat are cooked through.

Simmer for 20-30 minutes, then adding the basil and season to taste with salt, black pepper, and cayenne chillis.

Further salt, to taste with black pepper and cayenne powder to your taste.

This mixed bisque will answer only to about 4 helpings and if you really feel the need to share it wil someone – well, don’t make the helpings to big!!

…rather make the wine pourings a bit bigger… if you get my drift…
