This Lobster Bisque is a very thick soup or stew. As you can see in the picture below that the rice are being added separately.
Although this Bisque looks a bit dull, you can jazz it up with something colourful like a pinch of green parsley leafs or something similar.
The best known Bisque is typically made with chopped clams and diced potatoes, in a mixed cream and milk base, often with a small amount of butter.
But a Bisques main ingredient can be anything you're in the mood for from seafood, vegetables or red meat to chicken or even game.
Our Ingredience for this nice Bisque is:
1 can of lobster meat.
1 cup diced celery
1 small green pepper, diced
1 small red pepper, diced
1 tablespoon seasoning of your choice.
1 teaspoon pepper
1/2 cup butter
1/4 cup chopped fresh parsley
1/4 cup flour
2 (385 ml) cans milk
2 teaspoons salt
3 onions, chopped
4 medium size potatoes, peeled and diced
This recipe serves between 8 and 10 helpings.
The Metod and directions:
In a large saucepan, bring 4 cups of water to a boil.
Add potatoes and cook for 20 minutes or until the potatoes are tender.
Melt 1/4 cup of the butter separately over medium heat.
Add the onions, celery and peppers, cook, and stirring it occasionally, for about 10 minutes or until it softened.
Sprinkle this onion, celery and pepper with flour, herbs, salt and pepper.
Cook for two minutes.
Add to potato mixture.
In same skillet, melt remaining butter over medium heat.
Add lobster meat and cook for about 4 minutes while stirring.
Add this also to the potato mixture.
Add evaporated milk.
Stir over medium heat for 10 minutes or until heated.
This lobster Bisque is something you should really try. Its worth the effort and it is also a good treat for family and friend.
But Bisques, soups or stews are best enjoyed on cold days.
Especially in front of the fireplace.
Sweet wine or liqueur after a good meal such as this Bisque is a nice way to change the feast into a social visit...
