Cod and Shrimp Bisque



Cod and shrimp bisques are not very popular dishes for some reason and it should not be so because it really is a nice flavored and full meal.

Especially if you love soups and stews.

Actually - soups and stews are very good meals on cold and winter days. It keeps you warm for much longer than any fast food or even a warm cup of coffee would.

Soups and stews are also very good for people weakened by sickness or that went through a bad physical endurance.

Because the nature of the dish is such that most of the foods nourishing properties have already been broken down by the manner of cooking, it lends to it the reason for a quick recovery of the body.

Ingredients

1 cup of dry wine

1 cup of milk and/or cream or half of each

1/2 cup basil

1/2 cup of all purpose flour

1/2 cup of butter

1/2 cup of drained roast red bell pepper

1/2 teaspoon of pepper

1/4 teaspoon salt

12 oz. cod fillet cut into 1 inch pieces

12 uncooked and divined peeled medium shrimp

2 14 oz. cans of chicken broth


This is how you go about making this dish:

Take a 4 quart of Dutch oven; melt the butter over medium high heat in it.

Stir in the flour while gradually stirring in the milk and cream and the wine.

Then stir in the bell pepper and cod meat.

Heat this to a slow boil while you keep on stirring it occasionally.

The shrimp goes in next by stirring it in gently. Simmer this uncovered for 2 to 3 minutes or until the shrimp are pink and starting to sine through.

Stir in the pesto, salt and pepper to your taste.
